- Our company, a large institutional food service provider with multiple locations across Ottawa, requires a skilled and meticulous individual to handle the dedicated, high-volume production of all our base stocks, broths, and basic bulk soups, which are critical components of all our daily menus.
- This is a very structured, recurring role for 20-24 hours per week, ideally split over four 6-hour shifts, and it takes place in one of our main commissary kitchens, which is a state-of-the-art facility located in the industrial park, featuring key card access and specific delivery dock procedures you'd be trained on.
- You'd be responsible for overseeing the slow cooking and straining of large 60-gallon batches of various animal and vegetable stocks, ensuring consistency and adherence to our exact recipe specifications every single time.
- This work requires a strong understanding of commercial kitchen processes and an ability to safely manage very large, hot vats of liquid, and maintaining the highest standard of cleanliness in the stock area is absolutely mandatory.
- We will provide all the necessary ingredients, heavy-duty protective equipment, and the training on our specific commercial steam kettles.
- We are actively looking for more clients right now, so we need people who are reliable and can help us keep up with the increasing demands on our production line.
- We would like to pay a competitive hourly rate, and our budget is flexible depending on your prior commercial culinary experience, and we have a very clear communication preference: we communicate via email for all scheduling and procedural updates.
- Maintain the stock log and temperature records for every batch.
- Strain, cool, and safely store all finished broths and stocks.
- Clean all kettles and surrounding areas meticulously.
